A traditional beer brewery brings in grains, water, and other resources, creates beer, then has to dispose of spent grain and waste water. Only a small amount of the nutrients in the grain is used, and the spent grain is high in protein and fiber. The system designed by Zeri is a closed-loop system, mimicking an ecosystem. It takes advantage of the nutrients left in the spent grain to create a substrate used to raise mushrooms. Some of the spent grain can also be used as flour for bread. The spent substrate from the mushrooms is used to feed pigs. Waste from the pigs and waste water from the brewery goes into a digester to create biogas to be used as an energy source in the brewery or sold to another user. Another product is a nutrient solution that can be used in shallow ponds to raise algae, which are then fed to fish.
